Starting with the basics.

I heart cupcakes.

Things you’ll need:

Wilton has a great cupcake starter kit.  I use the tips in here a lot.  There are other companies that make tips but Wilton is in most craft stores and is easy to find.

The cupcake.

You’ll need a cupcake pan and liners.

Cupcake Recipe:

3 eggs
1 cup sour cream
1cup water
1 cup sugar
1 cup flour
1 box cake of your choice.

Preheat oven to 325 F.

In mixer bowl add eggs, sour cream, water and sugar. Mix until well incorporated.  Add flour and cake mix and mix on med low for 2-3 min until batter does not have any lumps.  Fill lined muffin pan 3/4 full.

Bake for 8 to 10 min until tester inserted in middle of cupcake comes out clean.  Let cool for five minutes then remove from pan.

Red White and Blue

Basic Icing:

1/2 C Butter
1/2 C Shortening
2 Tsp Meringue Powder
8 C Confectioners Sugar
2-3 Tbsp Milk
In mixer bowl add butter and shortening.  Blend on med-low until creamy.  Add Meringue powder.  Add sugar until desired consistency is reached.  Slowly add milk if icing becomes too thick.

Sprinkles

Putting them together:

Cut tip of icing bag so that the large 1m tip fits.  Make sure to cut it far enough back that the slits are not covered but not so far back that it can be pushed out.

Fold down the top of the bag about 1/4 of the way.  Fill bag.

Twist top.  Hold top securely in one hand.  Use this hand to squeeze the icing out.  Use other hand to guide tip.

Start at the outside of the cupcake and make a large circle.  When you come back to the starting point shift the tip in and circle the inside of the cupcake.  As you come back to this starting point you’ll want to pull the bag up as you stop squeezing.

July MultiColor

The color effects in the last picture were created by using one bag.  As you run out of one color fill with another color and go again.
