Valentines Cupcakes with a Brownie Surprise

Brownie Cupcake

My camera is still packed up in a box somewhere so we used my daughter’s camera.  It’s not the best quality but these delicious cupcakes were too good not to share.

Brownie Balls

First you’ll need to bake up a batch of your favorite brownies.  ( I chose a quick 88 cent box of brownie mix at the grocery store.)

I cooked it until it was almost done.  The tooth pick wasn’t clean when inserted in the middle and removed but the brownies were firm.

I then took a spoon and stirred the hot brownies to mix up the gooey middle and the crunchy edges.

Then I used a small ice cream scoop to measure out small portions.  Approximately 1 tablespoon each.

These are mini cupcakes so I halved each of those plops of brownies and rolled them into balls then put ‘em on a plate and tossed them in the freezer for about 30 min.

They need to be firm and cold so they hold their shape and don’t over cook while baking in the cupcake later.

Batter

I made a cake mix exactly like the box said.  Keeping the recipes simple and easy because there are a lot steps in this cupcake.

I put the mini papers in the mini cupcake tin and put about 1 tablespoon of batter in each cup.  I used my mini ice cream scoop again.  So convenient.

So now you can take the brownie balls out of the freezer and put one in the middle of each uncooked cupcake.

The more perfectly round your balls are the cooler it looks when you cut it in half.

But really once they start eating these little bites of heaven they aren’t going to be taking the time to cut them in half first. :)

Cooked Cupcakes

So here’s what they look like after they’ve been in the oven for 10 to 15 min at 350 degrees.

The brownies are mostly hidden now.  We’re so sneaky.

Icing Cupcake

Now you can load them up with icing and top them off with a yummy little conversation heart.

These can be decorated any way you like.  It’s really not going to matter what they look like so much because they are so yummy.

You’ll end up with about 72 cupcakes.
