My Mom used to make the best peanut butter and banana sandwiches.   I’ve added chocolate chips and turned it into a cupcake!

My kids LOVED them.  The peanut butter icing isn’t to strong and isn’t sticky.  There wasn’t a mess because they made sure to eat every crumb.

These were very simple and easy to make.  I used a wilton tip #20 but you could just cut the bottom of the icing bag and get similar results.  When you ice the cupcake without a tip it gives it a little swirl.

As you can see here, the cup of bananas kept the cupcakes moist and yummy.  The paper peels of easily and the cupcake held together well. (Until I pulled it apart: )

The recipe made about 24 cupcakes and took about a 1/4 of a bag of chocolate chips.  Maybe next time I’ll try adding the chocolate chips into the batter before cooking them!  Delish!
